NYE dessert: chocolate moelleux

About a week ago on New Year's eve I baked a chocolate moulleux for the second time in a row on NYE. Last year on NYE the dessert of our menu was this sweet delight too. By accident I ended up baking it last week for the same occasion again. The funny thing is that my first meal of 2013 was this dessert (we had it after 12pm) and my last meal of 2013 was the same dessert (before 12pm)! To top it off, I didn't bake it for the rest of the year! Coincidence? I think not.

For 4 portions you need the following ingredients: 110g dark chocolate in chunks, 110g unsalted butter, 50g sifted pastry flour, 100g sugar, 4 eggs, vanilla ice and/or red fruit. Measure all the ingredients carefully!

Beat the eggs.

Add the flour.

Melt the chocolate with the butter.

Add the melted chocolate.

Stir until you get a homogeneous mass.

Pour the mixture into a squeezable bag and put it in the refrigerator for about 30 minutes so that it can stiffen.

In the mean time, grease your baking rings with butter.

Powder them with flour so that your moelleux will come out of the ring easily.

Take your mixture out of the fridge. It is not completely stiff but somewhere in between stiff and fluid. Fill the rings up with the mixture for about 2/3 of the form. Put it in a preheated oven on 215° for 10 to 12 minutes.

Check regularly if the top is bursted. This is an indication for taking it out of the oven!

Carefully put it on your plate. Add ice cream or red fruit.

Then party!
